Flourless Peanut Butter Wild Cookies
I wish I could take credit for this recipe but I can't. They are quite simply a bite of heaven. Made with just a handful ingredients with minimal dishes and measuring, you will never go back to any other cookie. One of my best buddies makes these all the time and whenever I am at her house a bag of these is sure to come out of the freezer (hint: they are even better frozen!). But wait you say, aren't I the girl who's all about clean eating?! Yes! I'm all about everything in moderation, food made with REAL ingredients and there is ALWAYS room for dessert! Honestly, when I want a treat I want it to be a GOOD treat, something tasty and something clean. Sorry but a box of Jo Jo's doesn't do it for me. I'm just gonna go ahead and give you this recipe in double batch form because one batch won't last longer than you can say supercalifragilisticexpialidocious (I had to look up how to spell that!).
Wild Peanut Butter Cookies
Ingredients 2 eggs 1 tsp baking soda
1 jar of peanut butter (*only ingredients should be peanuts and maybe salt!) 1 cup coconut sugar
1 tsp pure vanilla extract
1 cup dark chocolate chips
Instructions
Preheat your oven to 350F. Set out two baking trays and cover with parchment for easy cleanup. I buy the pre-cut sheets which makes it even easier - win! In a large bowl mix all the ingredients together. It's a heavier dough because of the peanut butter so you really gotta mix but rest assured, even if you don't, chunks of peanut butter in your cookies isn't a bad thing. Spoon the dough onto parchment lined trays. You should be able to get 2 dozen cookies out of this.
Now here's the key, set your timer because you only need to cook these for about 8 minutes. I don't care if they don't look done to you when you take them out but trust me, undercooking is the way to go with these. Let them cool and they will firm up. I highly recommend storing these babies in the freezer!
