Crockpot Refried Beans
This whole Meatless Monday thing I’ve got going on here is making me all sorts of happy. I do have chicken defrosting for dinner so perhaps it’s more of a half meatless Monday. I looove refried beans but I know not everyone is into the bean thing. These freeze beautifully though so if you pack in your freezer in single-serve mason jars, you’re stocked for whomever does! It’s kind of nice to have an alternative protein option and they are a great source of fiber!
Crockpot Refried Beans
Ingredients:
1 onion, peeled and halved 2 cups pinto beans, dry, rinsed 1 jalapeño, seeded and chopped 2-3 cloves garlic, minced ¾ teaspoons salt ½ teaspoon pepper 1 pinch cumin 6 cups water
Instructions:
There is really nothing to say other than, throw it all in the crockpot and set to high for 6-7 hours. When done, mash with a potato masher, or not, depending on how you like it! I have it with eggs, I have in in a tortilla, throw it in with some roasted veggies. They are just so good! My seven year old likes it with cheese in a quesadilla!
