Mint Chip Smoothie
Smoothies…so easy yet so complex! How much liquid do I use? Should I add water? Coconut water? Almond milk? Coconut milk? Will it taste fruity? Will it be too sweet? Will it be sweet enough? Will I taste the greens? You see what I mean?! I swear I nixed the whole smoothie idea for the longest time because I was sure it was going to turn out to be a massive fail. But then I experimented and have found that if you keep the base relatively the same, you can add and subtract things to your hearts content! There are so many smoothie recipes out there that have a million different superfoods added in and if you already have them in your kitchen, by all means, put them in! But know this, a smoothie does NOT need to be complicated to taste good and to pack a vitamin punch. Here is my latest creation/obsession!
Mint Chip Delight (Serves 1)
Ingredients:
1 cup non-dairy milk of choice (I’m generally an unsweetened vanilla almond milk girl)
1 1/2 cups baby spinach (just take a handful and call it good)
2 mint leaves
1 1/2 tablespoons cacao nibs
1/2 frozen banana (I keep a bag of these in the freezer just for smoothies!)
Optional: 1 - 2 dates for sweetness
The cacao nibs add a great texture but don’t sweat it if you don’t have them and don’t make an extra trip to the store. You can sub raw cacao powder instead.
Blend and Enjoy!
